Five Rules For a Perfect Steak-(VIDEO)
Good instructional video as "Pan Roasting" is a simple restaurant trick you can use for any meat. NOTE: When you pull your meat off the heat, it will climb by 1 temperature as it rests because it continues cooking (If you pull it off at medium-rare it will be at medium after resting). Using foil (as this video instructs) will cause your meat to cook even longer which I would only recommend if you want your meat medium-well or well done. -Z-
